Happy New Year’s Day!  It seems crazy that it is already 2018!  I love the “fresh start” feeling of a new year, and one of my personal goals this year is to explore new cultural foods and food traditions (and share what I find with you all!).  Which is why I am starting a series on the blog called “In Celebration of Food”- look for many more articles to come throughout 2018 on this topic!

Did you know that January 1 is National Black-Eyed Pea Day?  In the southeast United States, traditionally black-eyed peas are consumed for good luck in the new year.  One cup of plain canned Black-Eyed Peas is packed with tons of great nutrients:

  • 8 grams of fiber

  • 122 mcg folate
